Recipes

A lot of our guests ask us for our recipes and some give us theirs. I have promised that I would put our recipes on the Internet. In most cases, I will give you the original recipe and then how I modified it to suit our needs. I will also give you some recipes that are my own invention.

 

Ponnukokur (original recipe)

Beat eggs, add sugar, salt, vanilla and cinnamon. Combine and sift flour, baking powder and soda. Add sour cream and sifted ingredients to egg mixture, mix until smooth. Gradually stir in milk.

To bake, use hot lightly greased griddle. Preheat griddle, then lift off heat while you pour in ¼ cup of batter. Tip pan to spread batter then set back on heat and bake until golden brown on bottom (about 2 min.) Turn and bake on other side. (1 min.) Pan about360 degrees F. Sprinkle with brown sugar and roll.

6 cups fresh raspberries

5 cups sugar

1/3 cup lemon juice

¼ lb. Butter

1 ½ cups milk

2 apples (thinly sliced)

1 cup flour

2-3 tbs. brown sugar

1 tsp. vanilla

½ tsp. salt

Eggnog Pancakes (Dave's)

Mix baking powder and eggnog; blend in flour and grill on med. hot greased pan.

I find that smoked and dried pickerel is a good alternative for bacon. For low cholesterol diets removing the egg yokes and whipping the oil and whites makes good light pancakes. Substituting Soya milk directly for milk works for lactose intolerant diets.
